I had dinner at GINZA FUJIMARU in Ginza. The course was a series of delights, right from the first amuse-bouche. The turban shell bourguignon, foie gras gougères, and snow crab tartare each had their own distinct character, yet were elegantly presented. The clam chowder made with clams from Chiba Prefecture and scallops from Hokkaido was rich in seafood flavor, and the aroma of rapeseed blossoms added a touch of spring. The pan-seared sea bream had a fragrant, crispy skin, and paired perfectly with the Pernod-flavored bein blanc sauce. What particularly impressed me was the salt-baked live abalone from Genkai. Its tender texture and concentrated flavor were exquisitely complemented by the rice koji sauce. The freshly baked bread was also delicious, and the entire meal, right down to the final mini curry, was meticulously crafted and thoroughly satisfying. By the time I finished with an iced coffee, I was enveloped in a pleasant aftertaste.
