SOBAGIRI-RAKUJYO is a store where you can experience making ramen noodles from flour in an open kitchen studio on the first floor of Kappabashi, Asakusa.
In just 30 minutes, you can master the art of noodle cutting, a technique that has been handed down in Japan since the Edo period (1603-1868).
You may have seen the process of making ramen noodles using a pasta machine, but at SOBAGIRI-RAKUJYO, you will learn how to cut noodles one by one, completely manually, using a large knife specially designed for noodle cutting.
We teach the safe and delicate fine cutting technique to people from all over the world in a gentle, careful, and slightly amusing way.

We have succeeded in completing the complex process of mixing the flour with water, kneading it, stretching it flat, and cutting it into thin strips with a knife in just 30 minutes.
