SOBAGIRI-RAKUJYO is a store where you can experience making ramen noodles from flour in an open kitchen studio on the first floor of Kappabashi, Asakusa. In just 30 minutes, you can master the art of noodle cutting, a technique that has been handed down in Japan since the Edo period (1603-1868). You may have seen the process of making ramen noodles using a pasta machine, but at SOBAGIRI-RAKUJYO, you will learn how to cut noodles one by one, completely manually, using a large knife specially designed for noodle cutting. We teach the safe and delicate fine cutting technique to people from all over the world in a gentle, careful, and slightly amusing way. Moreover, we have developed a new method that breaks with conventional wisdom. We have succeeded in completing the complex process of mixing the flour with water, kneading it, stretching it flat, and cutting it into thin strips with a knife in just 30 minutes. • Those with buckwheat allergies are not allowed to participate. Any injuries sustained during the experience are the responsibility of the participant. Parents are responsible for their children. Please be sure to arrive 10 minutes before your reserved time. Kids solo experience requires that they have the ability to knead and can use a large, heavy knife by themselves. If that seems difficult, they will be paired with a parent to participate. In the case of parent-child pairs, one adult must accompany each child. Three participants per table will not be allowed. As a rule, it is not possible to enter the restaurant for observation only, so please be sure to order your meal.
