Tapas Molecular Bar

I’ve been to this place for dinner twice. This place isn’t just dinner, it’s an experience and you live a story through the food. The first time I went, the story was kind of an Alice in Wonderland experience, and the second time was a day in the working man life of a Japanese person. I definitely preferred the first experience over the second, but both were fun and I will definitely be back again…. I love that It isn’t the same story and the menu and the experience changes about every six months. The chef is very creative with his flavors, they are delicious. The drink choices are spot on. There are only eight seats around the bar so you need to book in advance with a reservation. The location is beautiful, the Tokyo skyline is incredible from the bathroom. This is a once in a lifetime and you shouldn’t miss it.
Based on the research and reviews, tapas appeared to be a far more private and intimate group experience, which is what we expected given the price point. However, upon arrival, we were seated at a bar in a large entertainment-style room where the experience was fully visible to anyone nearby. It did not feel exclusive or personal as advertised. The drink packages were also extremely overpriced for what was included. It would have been helpful to have a clearer explanation of what each package contained prior to purchasing. In particular, the “mocktail” package was disappointing, as the drinks were essentially alcoholic-style cocktails recreated without the alcohol. For someone who does not enjoy the taste of alcohol but still wanted something fun and unique, this felt very underwhelming. In addition, the package only provided approximately one drink every 2–3 courses, which did not feel like good value. It was also our first wedding anniversary, which had been noted in the booking. Unfortunately, nothing special was acknowledged during the experience, despite seeing nearby guests celebrating occasions receive noticeably different treatment. Overall, the food was okay, but nowhere near worth the price or hype. Much of the experience felt more performative than culinary, with simple techniques such as moving ingredients around on a pan or using a flame torch being presented as premium entertainment. The servers themselves were fantastic and were the highlight of the night, but overall the experience felt heavily overhyped by Google reviews and photos. For approximately $950 AUD, it was ultimately a major letdown.
JAN 2026 The restaurant is located on the 38th floor with only eight seats per session. Reservation and pre-payment is required for the omakase menu consisting of 13 courses. It is a one of a kind restaurant where molecular science is used to create dishes that stimulate our senses and perceptions. The menu is unfolded through a picture book guided by the chef as he works through each course in a storytelling fashion while explaining the techniques used to achieve a certain sensory experience such as our perception of taste and texture based on the appearance of the dish. My top favorites from the menu were the salad, wagyu and the chocolate fondant. Overall the menu was creative and tasty, the dining experience was intriguing and engaging, and the chefs and staffs were very friendly.
Totally recommend this FUN chef’s table in MO Tokyo Tapas Molecular Bar offers one of the city’s most intimate and intellectually engaging dining experiences. With only 8 seats at the counter, the evening unfolds less like a meal and more like a carefully orchestrated performance — precise, poetic, and quietly arresting. From the first moment, intention is evident. Movements are deliberate, techniques exacting, and timing impeccable. Even the menu departs from convention: Chef Kento Ushikubo’s own hand-sketched booklet gently foreshadows the journey ahead without revealing its secrets. It is an invitation to trust, to observe, and to surrender to the experience. What distinguishes the experience most is the dialogue. The chefs work directly before you, explaining each gesture with genuine enthusiasm, weaving technique and storytelling into the rhythm of the evening. The atmosphere remains lively yet composed, animated by anticipation rather than spectacle. This is molecular gastronomy at its most articulate: immersive, imaginative, and deeply memorable. I’ve been wanting to visit this restaurant for quite some time and finally had the opportunity. I was really looking forward to the creativity and a full sensory experience. The chef absolutely delivered on technique, presentation, and overall concept — it’s clear there’s a lot of talent and intention behind each dish. That said, while the dishes were impressive in execution, I found the flavors a bit less memorable than expected. Unfortunately, no single dish truly stood out, which was surprising given the complexity and elements involved in each course. Dinner service also felt somewhat rushed, which made it harder to fully take in and appreciate the experience. I also wasn’t a fan of the mocktail I ordered, which unfortunately reminded me of soapy water. Overall, it’s an entertaining and thoughtfully designed dinner with a very skilled chef — I just wish the pacing and flavors had left a stronger lasting impression.
