Excellent - with only a few seats for a private dining experience. Extensive wine menu with focus on French wines. We enjoyed counter seats watching the chef's actions.
We’ve booked this restaurant to celebrate our wedding anniversary. The reception as we arrived was very warm and welcoming. The restaurant is pretty small and has a cosy atmosphere. The service was on point and we loved the wine recommendations from the sommelier towards a Japanese wine that paired perfect the whole spectrum of the menu from the first dish until the last. Also his recommendation of a dessert wine was surprising us and paired the dessert perfect. The kitchen team was great explaining the different dishes while presenting them and helped us to choose the right dishes for this evening. The interaction with them was easy and a lot of fun for us. Since we’ve haven’t mentioned the reason for our booking before, but the Métis crew reacted onsite very fast and professional. They surprised us in the end with some personalized desserts.
I was curious to try this restaurant because it is not your typical Japanese establishment in Tokyo. Overall, I enjoyed most of the courses and I appreciate Chef's strong cooking techniques but I didn't have that wow factor feeling after finishing the meal. It was good decent cooking but nothing jumps out to me as being extraordinary. The courses I enjoyed most were the steak, fish and bamboo tempura. The risotto was bland and the texture tasted a bit too el dente for me. The steamed bun with foie gras looked picture perfect but I couldn't taste the foie gras. Service was good but feels impersonal. In terms of value for money it was 6/10, I was expecting much more at this price range (at almost 30,000 Yen).
Overall I enjoyed the food here, but what's holding me back is the service and somewhat restrained flavours. Service was polite, but felt cold and robotic. Everyone in our seating was a foreigner so the atmosphere didn't feel very local either. I enjoyed watching the chefs cook our food using the woodfire oven. Most of the dishes were solid and the "kinki" rockfish was a standout. It was flavorful and the smokiness of the grill really shone. I also loved the melt-in-your-mouth wagyu that was so tender and luxurious. There were other dishes that were more of a mixed bag. The "fugu" pufferfish was good, but the risotto itself was bland and I feel like it was carried by the premium ingredient instead of the cooking. The desserts were underwhelming - the shaved ice tasted particularly soapy. In general many of the dishes felt too restrained in terms of taste and creativity. There were only a few where I felt I could really taste the smoke from the grill. That doesn't mean that the food wasn't good though... I just wish it was bolder in flavors. I know this is a personal preference because they use oak wood to grill instead of charcoal, which results in a more subtle taste. Back to the service... I was late by 10 min because my flight got delayed and I rushed to take a taxi here, but I heard from my friend that they were not happy when he told them. I wish the staff would be more understanding in stressful situations like this.
My first time in Tokyo and my husband booked Metis as our first lunch in the city. We love doing tasting menu and dining at Michelin nominated/starred restaurants. However, this topped all the experience with the intimate chef’s counter format and witnessing Chef Masa’s genius and his 25 years of experience of French cuisine with Japanese ingredients. Impressive breadth of flavors, carefully balanced so that no single element dominated. Each course felt deliberate and cohesive, with flavors that complemented and carried through each dish progression. Presentation reminded me think of ikebana sensibility — minimalist, intentional, with restrain that made each dish an art. And oh, the sake/wine pairing that was just mindblowing of how it either enhanced or balanced each bite. Service was excellent. Their sommelier is top notch. In terms of price, we paid for the Omakase menu with wine pairing. The price point was definitely worth it if you are into experiencing (consuming) the art and masterpiece of great chefs. It was also satisfying and appetite filling where the quantity was just right, but more importantly that the flavors were so well rounded, satisfying one’s tastebuds that I felt i was full the entire day and didnt crave for other flavors. Definitely worth a visit every Tokyo trip!
