Drink pairings are great. It's a bar setup with no servers so sit down, place your napkin on your lap and they will come to each person in turn. If you have trouble understanding the dish descriptions, listen for key words like consume, sous vide, and the ingredients, you'll figure it out. Really great team and food. Bathroom is at the end of the bar on the right. They will open the front door for access promptly at opening time. Guys hang your jacket, ladies they will have a place to put your stuff at your seat.
One of our favorite experiences in Tokyo. It is different. Japanese and french. We came with doubt, we left pleasantly surprised. Amazing courses, vibrant taste. We ordered paired wine menu and it was one of the best moves. Amazing pairing. 8 courses, 8 drinks. Great value by the way. Best regards to the su-chef guy from Texas!
Den Kushi Flori (デンクシフロリ) – A wonderful discovery in Tokyo! I originally wanted to book Florilège but couldn't get a reservation, which led me to discover their second restaurant—and what a happy accident that turned out to be. The atmosphere is lively yet refined, with attention to every small detail. Each dish was delicious, beautifully presented, and served with impeccable timing. The mushroom pie was a standout—elegant, flavourful, and almost too pretty to eat. The absolute highlight? The bamboo shoot rice cooked in a donabe. I went back for two bowls, and the crispy burnt rice at the bottom was simply irresistible. I usually skip dessert, but even that was delicate and thoughtfully done. The chef proudly told me that the beautiful ceramic pots used for cooking are his "babies"—and you can truly feel the love and care put into every dish. The wine selection is modest, but each pairing complemented the food perfectly. All in all, this restaurant offers incredible value for money—a true hidden gem.

Each course was not only visually stunning but also thoughtfully balanced—seasonal ingredients, exquisite plating, and surprising flavor combinations that worked perfectly together. This restaurant captures what fine dining should be: personal, refined, and full of heart. Highly recommended for anyone seeking a world-class, memorable omakase-style experience in Tokyo.
If you can get a reservation, and want to spend a bit on a very high quality meal, then I strongly recommend Den Kushi Flori! I will freely admit that we saw this place on social media, but can honestly say that it was worth the hype and the price. It has a cool, welcoming atmosphere, the food is prepared right in front of you and the staff makes the effort to engage with guests and takes the time to explain each dish. The food is Japanese Fusion, and it is beautifully prepared and plated - the taste was amazing. There is only one seating per night at 7pm, so book early. We loved it.
