The delicate aesthetic sense of "Higuchi" remains undiminished even after 7 years. This time, a memo of a wonderful dining experience that I find myself reminiscing about. It's a moment at the renowned restaurant "Higuchi" in Jingumae. The moment I took a bite, an overwhelmingly delicate and elegant flavor spread through my mouth. The beautiful meat in the photo, with its rich umami brought out by exquisite cooking, combined with the natural sweetness of the figs and the pungent aroma of the wasabi, created a truly blissful balance. Also, the dish beautifully garnished with sudachi citrus was not only visually artistic, but the refreshing acidity and the lingering aftertaste of the deep broth were irresistible. The refined craftsmanship that brings out the best in the ingredients to the fullest. The straightforward and refined dishes, never resorting to ostentation, reaffirm the profound depth of Japanese cuisine. Even after seven years, the memories of that experience and the flavors remain vivid, a testament to the soul and passion poured into each dish. Taking photos at the counter is prohibited (drinks are allowed), but the techniques and aromas unfolding right before your eyes are a unique pleasure of sitting at the counter. I became restless and excited halfway through, and when I had sake warmed in a snow crab shell, my body warmed up. The chef answered our questions modestly, but we were constantly amazed. On the way back, I was walking with a friend when... wait? We're near Goku no Kimochi, the restaurant I frequent! I should have come from Meiji Jingu-mae. Even so, I wonder how much time they spend on this... The taste was magical. The broth was clear. They combined the best qualities of the ingredients to bring out the maximum flavor. I was so focused on eating when my fellow reviewer asked, "Are you sure you don't need to take notes since there are no photos?" I jotted down a few notes, but then I thought, "I'm counting on you, fellow reviewer..." and went back to focusing on eating. Since it was my first visit, I really enjoyed watching the chef and his apprentices at work. I'm looking forward to my next visit. * **Steamed Egg Custard with Mushroom Broth** The aroma was simply wonderful. I thought it would be a thick sauce, but it was topped with a gentle broth. It warmed my chilled body. * **Simmered Sweetfish with Roe in Gyokuro Tea** Apparently, gyokuro tea makes it softer than hojicha tea. * **Ginkgo Nuts** Cooked with glutinous rice and coated with kudzu starch before being baked, resulting in a chewy texture. * **Deep-fried Shrimp Taro** Served piping hot. The umami and natural sweetness were superb. I ate it all in a frenzy. * **Soup (Lotus Root Shinjo, White Sweet Snapper)** The lotus root's natural sweetness was brought out by the salt. I discovered the sweetness of lotus root for the first time. * **Snow Crab** Instead of dipping it in crab vinegar, the crab vinegar was poured over it. After finishing, I asked for hot sake in the crab shell. Enjoying a wonderfully fragrant hot sake * Matsukawa flounder (Tomakomai) Thick and fatty, it surprisingly paired well with the chili vinegar. * Skipjack tuna Fatty and beautifully textured. Served with crispy grated yam. The soy sauce was Kyushu-style, perhaps? Slightly sweet and rich. I love this combination. * Spring rolls (late-season conger eel, thinly sliced ​​matsutake mushrooms) Enjoying the flavor of the late-season ingredients in crispy spring roll wrappers. * Grilled spotted snapper (Mie Prefecture, aged for one week) The spotted snapper was skewered and grilled over charcoal right in front of me. The skin was so crispy that it made a satisfying crunching sound when the chef cut it with his knife. The center was rare, the outside was plump and moist, and the skin was crispy. * **Misuji (beef shoulder), Moromi Miso and Myoga (Japanese ginger) salad, and sansho peppercorns** The meat arrived here. The moromi miso and myoga served with the meat were delicious, and even though it was near the end of the meal, I couldn't help but order more sake. * **Grilled conger eel and small turnips** An elegant flavor. To have this served before the final course... a wonderful course presentation. * **White rice** * **Vegetable-only mixed rice** I received two rice balls of this as a souvenir. * **Soba noodles** * **Red miso soup** * **Accompaniments to rice (pickles, beef simmered in soy sauce)** * **Fuyu persimmon** Sweet I had three different final dishes. Everyone was getting seconds. I was too full to get seconds. Next time, I'll take a walk before visiting. The meal ended with soba broth. This was also good. [Drinks] We shared one go (180ml) of sake between two people. - Plum wine with soda - Hoken - Seikyo (hot sake, served in a crab shell) - Mimuro Sugi - Sora Junmai Ginjo The total bill was just under 50,000 yen.

Higuchi A Japanese restaurant where reservations are hard to come by This time, we dined in a private room. So I didn't forget to take photos, lol. Many Japanese restaurants are overly formal and can't stand it, but Higuchi's cuisine is traditional and delicate, yet also soft and playful, making for a truly enjoyable meal. Taste - 4.4 Every dish exudes delicacy, thoughtfulness, and beauty. Service - 4.5 While the private room makes it difficult to serve, they accommodated our small, additional orders, making for a truly enjoyable experience. Atmosphere - 4.5 The interior is dazzlingly Japanese. Because it's a private room, we couldn't see the chef's work, but the atmosphere was still charming. Value for Money - 4.2 The quality of the food, service, and atmosphere were all worth the price. Drinks - 4.0 The menu is simple and minimalist, typical of a Japanese restaurant.

This is my favorite kappo restaurant, and I visit it every season. The proprietress's sake selection is always impressive. Tonight, I once again enjoyed the seasonal masterpieces, each dish reflecting the owner's sincere attitude! A visit to this restaurant allows you to experience the "omotenashi" hospitality that Japan is so proud of. I can't wait for my next visit.
